Firstly, the top layer of the brownies will be watery. Inside the brownies when they are underbaked, the texture will be mushy.
Underbaked and gooey brownies are different. Gooey fudgy brownies are properly heated but the texture inside remains gooey. Underbaked brownies are not fully heated yet, so eating underbaked brownies may make you have a stomach ache. Sometimes, even if the surface of the brownies look like they are properly baked, the center may still be raw since it takes more time for the heat to get inside the brownies. In this case, keep heating your cake for 10 to 15 minutes more. The perfect brownies for you will really depend on what types of brownies you like!
